Prepare a variety of sushi, nigiri, sashimi, and other Japanese dishes, ensuring freshness and presentation meet high standards.
Plan and develop seasonal menus in collaboration with the manager, estimate food and labour costs, and price menu items accordingly.
Oversee the preparation of raw fish, seafood, chicken, beef, vegetables, and other ingredients. Cook and assemble various Japanese dishes.
Order necessary food supplies and manage inventory, ensuring the availability of fresh ingredients while controlling costs.
Monitor the quality of dishes at every stage of preparation and presentation, ensuring consistency and excellence in taste and appearance.
Discuss food preparation issues with the manager, ensuring smooth kitchen and service operations.
Demonstrate cooking techniques and procedures to staff, provide guidance on food preparation, and ensure they follow best practices.
Explain and enforce hygiene and food safety regulations. Ensure the kitchen maintains strict adherence to sanitation standards.
Select, train, and supervise chefs, cooks, and kitchen-hands. Foster a positive working environment and help staff improve their culinary skills.
Handle freezing and preservation of ingredients to optimize their shelf life while maintaining quality.
Design and execute food presentations that enhance the dining experience, ensuring each dish is visually appealing.
Inspect kitchen equipment and supplies to ensure they meet safety and operational standards. Coordinate purchases and repairs as needed.
Qualifications/Experience :
Relevant Level 5 qualification, or
At least 3 years of relevant experience in a kitchen, Japanese restaurant, or similar establishment.
Additional Requirements :
Must pass a pre-employment drug test.
Must have a clean criminal record.
