We are currently recruiting a Sous Chef and Casual Cook to be part of our kitchen team:
Major Functions Directly responsible for all kitchen functions including food purchasing, preparation, and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion, and food cost control.
Ensure that all food and products are consistently prepared and served including portioning, cooking/heating, and serving standards.
Assumes 100% responsibility for quality of products served.
Stocks and maintains sufficient levels of food products at line station to assure a smooth service period.
Closes the kitchen properly and follows closing checklist for kitchen area. Assists others with closing kitchen.
Ensure that all products are ordered according to product specifications and received properly, assuring that deliveries are signed and accounted for.
Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes, and waste control procedures.
Responsible for maintaining appropriate cleaning schedules for kitchen floor, mats, walls, and other equipment and food storage areas.
Responsible for the financial components of the kitchen, including managing budgets.
An ability to motivate, inspire, and influence the team in a highly diverse environment.
To champion the Food Safety Programme to all staff and be committed to creating a Health and Safety culture.

Prior experience in a similar hotel-based role is desirable.
