Servicing around 100 to 180 covers for dinner, both TDH and a la carte, with approx 200 for breakfast in the height of the season.The candidate will come from a Hotel or Events background and must have previous experience managing a kitchen at a Senior Chef or Sous Chef level. The Senior Sous Chef will be ready to lead the team in absence of the Head Chef and continue on the current service delivery of our busy kitchen. Reporting directly to the Executive Chef and General Manager, your role will involve:Responsibilities & Key tasksCreating a variety of menus, with the ability to cater to special dietary requirementsProducing quality cuisine across the range of outlets in our hotelControlling the Food Control Plan and the daily managing of the CHOMP programHaving a strong focus on health and safety and NZ food hygiene standardsFood ordering and stock takesStaying within the food budgetLeading and developing the kitchen teamThe ideal candidate will have:Minimum 2 years' experience as a Senior Chef or Sous ChefBuffet, Banquet, and a la carte experienceA professional approach and a passion for the industryThe ability to lead, support & mentor a small teamExcellent communication skillsA positive work attitude and flexibility with shiftsCurrently resident in New Zealand with appropriate work permitSubsidized seasonal staff accommodation can be made available.Hours of work: This is a seasonal role on a rotating roster Monday to Sunday; weekends, school holidays, and public holidays will be required to be worked to meet hotel demands.
