We are seeking talented and exceptional chefs, who are masters of their craft, to work at two of our venues: Onslow: is one of Auckland city center's most sought-after dining establishments. Gilt Brasserie: is a bustling brasserie that offers a delightful blend of European cuisine and refined versions of classic dishes for all occasions. Support the Head Chef and work with the kitchen team to prepare food that consistently exceeds customer expectations and produce menu items to the highest standard including: Responsibility for the operation of a designated section of the kitchen. Perform food preparation tasks in the kitchen, to assist in the preparation of dishes. Ensure that recipes and measurements are strictly adhered to, to ensure consistency, quality and cost control. Develop skills by working in different sections of the kitchen. Impart knowledge and training to junior kitchen team when necessary. Ensure adherence to all relevant health, safety and hygiene standards. Ensure all equipment is well maintained, operational and work environments are kept clean and organised. A solid understanding of kitchen service along with proficiency in the mechanics of a busy service. Sous Chef additional duties: Management of all aspects of the kitchen including operational, quality and administrative functions. Manage and mentor other senior chefs in the kitchen. Plan and produce menus to the establishment's standard alongside the Head Chef. Meet and liaise with suppliers keeping up to date with new food trends and products. Write recipes and cost all dishes keeping all documents up to date. Check all dishes as they leave the kitchen for establishment quality, presentation and temperature. Maintain food and wage costs to the budget. Manage staff rosters and staff records. Manage all kitchen staff - impart knowledge, skills and training to all kitchen staff to ensure high standards. Qualifications: 3 years relevant work experience OR NZQF Diploma. Permanent. Full time (minimum 30 hours per week) or part time (15-20 hours per week) on a roster system that can include weekends, evenings and some public holidays.
