Kitchen Responsibilities · Collaborate with the Tourism Manager and team to cater to tourism visitors, guests, Mount White staff.
· Plan the menu, ensuring that each dish is nutritious and incorporates seasonal produce from the property, while adhering to budgetary considerations.
· Create new recipes to keep the menu fresh and appealing.
· Maintain high food quality standards and ensure timely service.
· Identifying, developing, and maintaining kitchen policies and procedures.
Ensuring all dishes that leave the kitchen are prepared, portioned, and plated consistently even in your absence.
· Having in-depth knowledge of the dishes served on the menu (ingredients, process, and plating).
· Designing and developing new dishes and special menus & Submitting costings for menu items.
· Communication skills, both oral and written, with keen observational abilities.
· High degree of time management skills to ensure efficient operations.
· Personal integrity, loyalty, honesty, and discipline, with a tidy and organized approach · Oversee all operations in the Cookshop building, including cleanliness and maintenance.
· Manage inventory of ingredients and equipment, placing orders with suppliers as needed.
· Foster positive relationships with customers.
· Enforce safety and sanitation standards in the kitchen.
· Maintain records and ensure compliance with food safety standards.
· Knowledge of food safety and health guidelines in New Zealand and adhere to them.
· Experience in teaching international cuisine workshops.
