We are an Australasian brand and our Italian menu predominantly offers an extensive pizza and pasta menu with some seafoods, steak, salads, and desserts.
This is not your normal Head Chef's position. Because we are a franchise, you will not be required to develop menus or work out food costings.
As Head Chef, your primary focus will be to keep the kitchen running like clockwork and ensure that the team environment is positive and welcoming so that the team members feel good about coming to work. You will work alongside a very competent team of Chef's de Partie and Pizza Chefs.
DUTIES AND RESPONSIBILITIES: Maintaining kitchen policies and procedures. Ensuring all dishes that leave the kitchen are prepared according to the La Porchetta standards. Mentoring and training other kitchen staff to ensure high standards. Ordering and maintaining inventory to ensure efficient operations. Setting and maintaining excellent standards for food safety. Ensuring Health and Safety regulations are adhered to and staff all practice these. Managing and maintaining records according to our Food Control Plan. PREFERRED COMPETENCIES TECHNICAL: New Zealand Certificate (level 4) in Cookery or equivalent. A minimum of 1 year's experience as a head chef or Kitchen Manager. INTERPERSONAL & PERSONAL SKILLS: Problem-solving ability to successfully resolve any issues that arise. Ability to delegate and give instructions. Ability to work well under pressure. Reliable and flexible to change. DETAILS: Full-time hours to start as soon as possible. Flexible roster, Monday to Sunday lunch and evening shifts, 10.30am - 10pm.
