Pablo's is an all-day eatery in the heart of The Sands Papamoa, offering deli-style sandwiches and coffee in the mornings, transitioning into Latin-inspired cuisine by night. We are looking for a dynamic and passionate Head Chef to lead our kitchen team and take our culinary offerings to the next level.Key Responsibilities:Menu Development: Design and refine a menu that reflects our Latin-inspired cuisine, with a focus on seasonality, creativity, and customer preferences.Kitchen Leadership: Lead and inspire the kitchen team, ensuring high standards of food preparation, presentation, and service.Staff Training: Mentor and train kitchen staff, including sous chefs, line cooks, and kitchen assistants, fostering a culture of continuous improvement.Inventory and Cost Management: Oversee inventory control, ordering, and budgeting to ensure cost-effective operations while maintaining quality.Health and Safety Compliance: Ensure all kitchen operations comply with health and safety regulations, maintaining a clean and organised kitchen.Quality Control: Monitor food quality from preparation to plating, ensuring consistency in taste, presentation, and adherence to recipes.Collaboration: Work closely with the General Manager and front-of-house team to create a seamless dining experience for our guests.Event and Special Menu Planning: Develop and execute special event menus, seasonal offerings, and daily specials.Innovation: Stay up-to-date with food trends and incorporate innovative ideas to keep the menu fresh and exciting.Experience and Qualifications:Proven Experience: Minimum of 2-3 years as a Sous Chef or a similar role in a high-paced, high-quality kitchen.Culinary Expertise: Strong knowledge of Latin cuisine and a passion for innovative cooking techniques.Leadership Skills: Demonstrated ability to lead a team, manage kitchen operations, and work under pressure.Attention to Detail: A keen eye for detail in food preparation and presentation.Time Management: Excellent organisational and time management skills, with the ability to multitask and prioritise.Problem-Solving: Strong problem-solving skills and the ability to think on your feet in a fast-paced environment.Communication: Excellent communication skills, both with the kitchen team and front-of-house staff.
