The venue boasts 20 different spaces for events ranging from small business meetings and conferences through to gala dinners and concerts for up to 6000 pax. Menus are catered to the clients' needs and budget and can include morning/afternoon teas, buffets, multi-course plated dinners, and platters/canapes.The roleResponsibilitiesReporting to the Executive Chef and Head Chef, the Sous Chef is a vital member of the key leadership team. The business is experiencing exceptional growth, and we are looking for a talented leader who can deliver innovative & creative solutions while leading their team. No two days are ever the same, and there's never a dull day. Some of your responsibilities will include:Working alongside the Executive and Head Chef to create stunning menus with seasonal ingredientsStock control - ordering, monitoring deliveries, and stocktakingOverseeing a team of passionate chefsEnsuring the business operates within its Food Control Plan guidelinesEnsuring the seamless flow during serviceAssisting with the management of the kitchen budget & purchasingThe WhoThis position would be best suited to a candidate who has had a minimum of 5 years experience at Sous Chef level, with significant experience in banqueting/events/catering for groups of 500 pax or more essential. You'll be a hands-on operator who enjoys being in amongst the action and always leads from the front. You'll work hard to build your team up, providing encouragement & positive reinforcement where it's due and constructive criticism if required.
