Carrington Estate is set amidst 3000 acres of rolling coastal land on Northland's magnificent Karikari Peninsula, with a seemingly endless stretch of white sand beach, world-class golf course, and award-winning winery. Our estate complex includes 10 lodge rooms and 10 villas, totaling 60 bedrooms, along with restaurants, bars, winery, and conference facilities.
We are looking for a talented Executive Chef with international experience to manage the team at this award-winning Winery/Café and Restaurant based in Karikari Peninsula of Far North district of NZ. You will be working closely with the General Manager to ensure menu development, smooth delivery of meals, consistent quality, and keep the team focused on our guests' needs.
Opportunities in venues like this where you can look at the culinary scene and hunt for awards don't come by often. You will be the leader of the flagship venue in an expanding group, and there is a chance to make a name for yourself as Executive Chef in the award-winning KariKari Estate.
Successful candidates should have the following qualities:
Strong background at Executive Chef Level, with at least 8 years of experience as an Executive Chef, Executive Sous Chef, or Head Chef.
Experience with international and New Zealand cuisines and have international working experience to bring the flavors alive to Carrington Estate.
Must have worked in a Resort/Hotel environment with a large kitchen brigade.
Highly organized, able to provide food of the highest quality for large-scale events of up to 500 pax, including large-scale weddings and festivals.
A passion for the kitchen that is second to none, with the ability to inspire a talented team to continue to push themselves.
Extremely confident with all costing aspects of the kitchen, highly motivated with an excellent financial understanding.
Extensive professional cookery experience and qualifications.
A university qualification in management studies in Hospitality Management would be well regarded.
Qualifications in HACCP and Food Safety Management.
Proven ability to manage and develop a kitchen brigade and hold a On Job Training Certificate.
Ability to create interesting menu options, crafting tasty and well-presented cuisine.
Innovative in menu design, confident in menu development, and creating seasonal dishes that excite.
Understand the importance of flavor and attention to detail is key, with knowledge of the New Zealand dining scene.
Passionate about food and service with a modern and relevant palate, highlighting current trends.
Excellent personal presentation, organizational skills, costing management skills, and well-developed leadership skills. Working closely with Management to ensure quality and efficiency.
Ensuring the Kitchen builds and maintains a reputation for excellence will be your top priority.
