Job Title: Director of Food and BeverageHotel: ROKI Collection QueenstownRestaurants: The Terrace & The Dining RoomLocation: 2 Brunswick St, QueenstownReports To: General ManagerMinimum guaranteed hours: 40 per weekSalary: $90k to $105k, depending on qualifications and experience________________________________________Position Overview:The Director of Food and Beverage will oversee all food and beverage operations at ROKI Collection Queenstown, ensuring world-class service standards and exceptional dining experiences.
This role requires a visionary leader with a passion for culinary excellence, innovation, and delivering unparalleled guest satisfaction.
The role will manage and elevate two signature restaurants, The Terrace and The Dining Room, along with in-room dining, lounges, and off-site dining.________________________________________Key Responsibilities:Strategic Leadership• Develop and execute a comprehensive food and beverage strategy aligned with ROKI's brand values and ultra-luxury standards.• Ensure both The Terrace (casual elegant dining) and The Dining Room (fine dining) deliver unique, unforgettable culinary experiences.• Collaborate with our Director of Culinary, Paul Froggatt, along with Restaurant Managers to maintain innovative, seasonal menus and creative beverage programs.• Continuously monitor global culinary and hospitality trends to uphold ROKI's position as a trendsetter.Operational Excellence• Oversee day-to-day food and beverage operations, ensuring efficiency, consistency, and exceptional quality.• Establish and maintain SOPs (Standard Operating Procedures) for all F&B outlets, including in-room dining and banquets.• Monitor all operational areas to meet brand standards in service delivery, cleanliness and guest satisfaction.• Manage and optimize budgets, financial plans, cost control, and profit margins.Guest Experience• Cultivate a guest-centric culture by consistently exceeding guest expectations.• Address and resolve guest feedback, fostering loyalty and return visits.• Implement personalized guest experiences and exclusive dining offerings for VIPs.Team Development• Recruit, train, and supervise high-performing teams, including managers, servers, sommeliers, and culinary staff.• Foster a collaborative and empowering work environment.• Provide ongoing coaching, professional development opportunities, and performance evaluations.Financial Management• Develop annual budgets and forecasts for all F&B outlets and services.• Track key performance indicators (KPIs), such as revenue growth, guest satisfaction, and operational costs.• Maximize revenue through upselling, unique promotions, and optimizing covers.Brand Compliance & Quality Assurance• Ensure compliance with health, safety, and sanitation standards (HACCP and local regulations).• Uphold ROKI's ultra-luxury brand ethos and identity in every aspect of F&B.• Maintain relationships with premium vendors and suppliers to secure top-quality products.________________________________________Qualifications & Skills:Required• Education: Diploma level or higher qualification in Hospitality Management, Culinary Arts, or a related field.• Experience: Minimum of 5 years' experience in food and beverage leadership roles, ideally within luxury hotels or fine dining establishments.Preferred• Proven track record of elevating dining concepts and achieving financial success.• Strong leadership and interpersonal skills, with the ability to inspire diverse teams.• Exceptional knowledge of wine programs, mixology, and global culinary trends.• Proficiency in financial management, budgeting, and forecasting.• Outstanding communication, negotiation, and organizational skills.• Knowledge of luxury hospitality service standards (Forbes Five-Star, Michelin Guide, etc.
