Chef's Job description- Order food and other supplies for kitchen operation;- Estimate food and other costs for kitchen operation;- Review and plan menus by calculating ingredient cost, creating new recipes and consulting with management for prices;- Check the quality of dishes at all stage from preparing ingredients to serving dishes to ensure served dishes meet quality standards;- Check the quality of food supplies and stock to ensure the ingredients are suitable for cooking;- Plan daily food preparation with owner and other kitchen staff by considering seasonal availability of ingredients and likely customers numbers, etc.;- Demonstrate cooking procedures to other kitchen staff for their upskilling; - Advise other kitchen staff in food preparation and cooking;- Prepare and cook all dishes including, but not limited to, sushi rolls, nigiri sushi, sashimi and other a la carte;- Prepare and cook food ingredients including but not limited to, fresh fish, seafood, meat, poultry, and vegetables;- Cook soup and sauces such as teriyaki sauce, sushi vinegar, noodle soups salad dressings;- Ensure the kitchen meets relevant food safety regulations and standards;- Explain in-house food hygiene policies including personal hygiene in the kitchen and relevant regulations and standards to other kitchen staff - Be involved in recruitment of new kitchen staff by evaluating their skill levels and trialling them for a short time in consultation with management;- Freeze and preserve ingredients for later use;- Ensure the quality of ingredients are suitable for cooking- Ensure the ingredients are stored in a correct manner and labelled to maintain first in – first out rule;Chef's Required Skills - At least 3 years of work experience in commecial kitchens or equivalent qualification;- Sufficient knowledge in Sushi and Japanese food and beverage culture; - Relevant work experience in New Zealand is an asset;- Good command of English to carry out above duties;Please send your CV with the cover letter first.
