Purpose As Chef de Partie, you are responsible for the outlet(s) in the absence of the Head Chef or Sous Chef.
You manage the kitchen, or a section of the kitchen to ensure everything runs smoothly, peacefully, and efficiently.
You ensure all food standards, preparation, presentation, and cooking techniques are carried out according to recipes and departmental policies and procedures.
You adhere to strict hygiene and safety procedures at all times.
Primary Responsibilities Food production, presentation, and quality never slip below the standard, maintaining a clean and tidy workspace and equipment, ensuring food handling, hygiene, and storage are as required.
Ensure preparation of mise en place items for readiness of current and proceeding shifts, and maintain par levels of dry goods.
Produce food in line with kitchen recipes and standards, preparing and cooking with a sense of urgency without compromising safety or quality.
Organise your assigned section/outlet to run efficiently and productively, supporting your team as needed.
Monitor and control food wastage, portion size, and food cost, and assist in stocktake if required.
Monitor and analyse guest feedback, ensuring value for money while exceeding guest expectations.
Champion the right behaviour and attitude, ensuring the team can rely on you.
Communicate any kitchen issues to the Head Chef promptly.
Skills, Experience and Requirements Formal Industry Trade Qualifications or completion of a Commercial Cookery Qualification.
Current Food Safety Supervisors Certificate.
Experience in a chef capacity in a similar style and sized property.
Ability to meet the physical demands of the role, including carrying plates and using fine motor skills.
Shifts may require frequent gripping of cleaning products and cloths for cleaning kitchen areas.
Shifts may involve pushing and pulling, walking on uneven surfaces, including tiles and carpets.
Regular lifting and relocating of delivered goods is required.
Frequent bending, reaching, and lifting of kitchen equipment, utensils, and crockery is necessary.
Exposure to areas with higher temperatures during shifts.
Engagement in preparation tasks at a waist-high bench is frequent.
Immaculately presented with exceptional grooming and appropriate uniform and name badge.
Exceptional communication skills; multilingualism is an advantage, with proficiency in spoken and written English.
Shift work on a rotating roster is required, including late shifts; flexibility is essential.
