Hurley House is a privately owned exclusive boutique hotel, that opened in 2016. It is set in a countryside location near Henley-on-Thames, Marlow and Maidenhead. We are looking to recruit a full-time Breakfast Chef/Kitchen Administrator to join our Kitchen team. The candidate must live within a 30-minute drive of our venue. This is a multi-tasking kitchen admin role suitable for an experienced chef who is looking to transition to more of an admin role, working daytime hours.
48 hours, 5.5 days a week, starting 6:30am
Basic salary £40K plus quarterly bonus and usual benefits.
It is expected that the job holder will cover Breakfast and limited Lunch services.
It is essential that the applicant has a comprehensive experience in the workings of the kitchen and demonstrate accuracy and great attention to detail.
Experience in STO (our online Stock Control System) and Alert65 (our H&S and Food Hygiene Compliance System) is an advantage.
Breakfast and light lunch services:
Cover Breakfast service for Hotel guests Cover light lunch service, as rostered and directed by the Head Chef Food Deliveries:
Receiving food deliveries in the morning Checking items received vs items ordered Informing Accounts of any discrepancies Following-up suppliers for missing items and requesting credit notes Updating the Stock Control System Stock Control:
Working with the Head Chef to add/update recipes for accurate stock depletion Processing and recording weekly batches and wastages Running weekly food stocktakes, investigating discrepancies and adjusting/annotating accordingly Conducting yield calculations Ensuring smooth integration between the Point of Sale and Stock Control systems. Food Hygiene and Safety Management:
Ensuring full compliance with Food Hygiene and Safety in the kitchen at all times, including: Recording temperature readings on daily basis Ensuring all Food Hygiene and Safety directives are adhered to, and tasks are completed in a timely manner and recorded on the system Ensuring all Food Handling training and tasks are completed in a timely manner and recorded on the system Ensuring all suppliers' certificates are up-to-date and following-up as and when necessary Running daily inspections of kitchen, stores, equipment, etc. to ensure compliance at all times Please be aware that whilst only a short distance from Maidenhead, Marlow and Henley, the hotel is located in a rural location; therefore, having your own transportation arrangement is essential.
