Company: Breadhead is a well-established business with a great reputation for bread, pastry, savoury food, coffee, and service. We need a well-qualified full-time baker to join our team.
Eligibility Criteria:
Must hold a NZQF Level 4 or higher Trade Qualification in baking
Must have worked at least 3-6 months in a Baker or Bakery Assistant role
Must be proficient in all aspects of dough management, including calculating weights and hydrations, mixing, dividing, storing, proofing, shaping, and baking of a variety of yeasted, non-yeasted, and enriched doughs
Must be ready to work in a rostered 7-day operation
Must be ready to work early start hours as early as 3am and split shifts
Summary of Job Responsibilities:
Displaying accuracy, skill, and care during all aspects of dough management specific to all bread, pastry, and savoury products
Planning volume of bread and pastry required on a daily basis and calculating flour and ingredients weights and hydrations for all doughs
Accurate and consistent weighing, mixing, dividing, shaping, proofing, and storage of doughs (sourdough, yeasted doughs, and enriched doughs)
Checking the quality of raw ingredients and calculating flour and ingredient weights and hydrations for all doughs
Making dough to set recipe for multiple different items
Organising the process of loading, baking, and unloading different types and volumes of bread and pastry
Baking what is required each day for the café and catering orders
Accurate and consistent baking of all pastry and breads to ensure high standards and minimisation of waste
Checking the oven temperatures and monitoring the baking times throughout the cooking process
Maintaining standards of quality, cost, presentation, flavour, and recipe of food
Observing the quality and size of bread and pastry produced and raising any changes with head baker and/or owner to work out a solution to retain consistency moving forward
Working with head baker to ensure section is well organised for effectiveness and efficiency of operation and recommending improvements to Kitchen Manager/Director
Assisting on all sections, as required, with accuracy and care
Completing prep of 'from scratch' sandwich and savoury section components including chicken, lamb, beef, pork, and dairy items
Preparing savoury and sandwich section items as required to fill cabinets at the beginning of the day and 'to order' throughout the day
Being familiar with and following the food control plan
Taking responsibility for controlling food costs to achieve minimum wastage
Ensuring food is labelled, dated, and safely stored as per food safety standards
Researching and developing product range and contributing ideas on an ongoing basis
Ensuring all statutory and establishment hygiene regulations are adhered to
Maintaining and adhering to high food safety practices within the kitchen
Maintaining a high standard of personal hygiene and a neat and professional appearance
